Recipe: Cheesy Zucchini Bake

Love pasta night but want a lighter option? This zucchini bake has all the flavors of lasagna or baked ziti—without the extra carbs. It’s packed with fiber from veggies, protein from cheese, and all the bubbly, cheesy goodness you crave.
Ingredients:
2-3 zucchini, sliced thin
1 cup marinara sauce
1 cup shredded mozzarella
¼ cup grated Parmesan
Salt & pepper to taste
Instructions:
Preheat oven to 400°F.
Layer zucchini, marinara, ricotta, and mozzarella in a baking dish. Repeat layers.
Top with Parmesan and Italian seasoning.
Bake for 40 minutes or until golden and bubbly.
